The New Year’s tradition of pork and sauerkraut is well known in Ohio Amish Country, due to the region’s Swiss and German heritage. Pork has traditionally represented prosperity and progress, while sauerkraut brings blessings—including those of nutrition, since cabbage is high in Vitamin C and healthy probiotics. With our region's active farm life comes a bounty of excellent meats and home grown veggies: pork, sausage, cabbage, and sauerkraut—and the time-honored ways of preparing them.
